Your Christmas cake looks absolutely delicious - but aren't you a little late in baking it? Perhaps yours is the tee-total variety and is not gradually laced with brandy or sherry during the weeks of Advent. I do hope you enjoy eating it when the great Feast arrives.
2 1/4ibs of fruit soaked in 4 tablespoons of Courvoisier Brandy for a couple of days before baking and I've never had a complaint in 20 years of Christmas cake cooking.
That includes two cakes for my parent's ruby wedding party and two for my brother's wedding.

Yup. Less than ideal circumstances at present.
