Your Christmas cake looks absolutely delicious - but aren't you a little late in baking it? Perhaps yours is the tee-total variety and is not gradually laced with brandy or sherry during the weeks of Advent. I do hope you enjoy eating it when the great Feast arrives.
Yup. Less than ideal circumstances at present. 2 1/4ibs of fruit soaked in 4 tablespoons of Courvoisier Brandy for a couple of days before baking and I've never had a complaint in 20 years of Christmas cake cooking.That includes two cakes for my parent's ruby wedding party and two for my brother's wedding.Happy Christmas.
